Avocado Whip.

Ingredients:

4 Boiled Eggs, Shells removed

1 Avocado, Flesh only

1 Lime, juiced

Ground black pepper & Celtic sea salt to taste

Preparation:

Place all ingredients into a food processor and mix for 20 seconds. For a smoother spread, scrape down the bowl and mix for 5 seconds.

Serve on toasted Sourdough.

Notes:

This recipe is great for breakfast or a snack. I have added sliced shallots and coriander leaves, you can add your favourite herbs too.
